Potato gnocchi roasts alongside sausage and peppers on one tray until crisp-edged and caramelized — the kind of recipe built to use up whatever's left in the crisper.
Ingredients
- 500g shelf-stable potato gnocchi
- 4 Italian sausages, sliced into rounds
- 2 bell peppers, chunked
- 1 red onion, chunked
- 3 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp chili flakes
- Parmesan, grated, to finish
Method
- Heat the oven to 220°C (425°F).
- Toss the gnocchi, sausage, peppers and onion with olive oil, oregano and chili flakes on a large sheet pan.
- Spread everything in a single layer and roast for 25-30 minutes, tossing halfway, until the gnocchi is golden and the sausage is cooked through.
- Finish with grated Parmesan and serve straight from the tray.
