Leftover Rice Fried Rice

The classic use-it-up recipe: day-old rice, whatever vegetables are left, and an egg — the expiry radar's top recommendation on a Sunday night.

Ingredients

  • 3 cups cold cooked rice
  • 2 eggs, beaten
  • 1 cup mixed vegetables, diced
  • 2 spring onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil

Method

  1. Heat the vegetable oil in a wok or large skillet over high heat.
  2. Scramble the eggs quickly, then push to one side of the pan.
  3. Add the vegetables and stir-fry for 2 minutes.
  4. Add the rice, breaking up any clumps, and stir-fry for 3-4 minutes until heated through.
  5. Stir in the soy sauce and sesame oil, top with spring onion and serve.
