One-Pot Tomato Basmati Rice

Ingredients

  • 1.5 cups basmati rice
  • 2 cups chopped tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 2 tbsp vegetable oil
  • 2.5 cups vegetable stock
  • Fresh coriander, to finish

Method

  1. Rinse the basmati rice until the water runs clear.
  2. Heat the oil in a heavy pot and sauté the onion and garlic until soft.
  3. Stir in the cumin and turmeric and cook for 30 seconds until fragrant.
  4. Add the tomatoes and cook 5 minutes until they break down.
  5. Stir in the rice and stock, bring to a boil, then cover and simmer on low for 15 minutes.
  6. Rest off the heat for 5 minutes, fluff with a fork and top with coriander.
