Chili-Lime Foil Pack Salmon

Salmon fillets steam in a foil parcel with chili, lime and whatever peppers are closest to their expiry date — almost no cleanup, and the expiry radar's favorite excuse to cook.

Ingredients

  • 2 salmon fillets
  • 1 red chili, sliced
  • 1 lime, half sliced and half juiced
  • 1 bell pepper, sliced thin
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tsp sesame oil

Method

  1. Heat the oven to 200°C (400°F).
  2. Lay each salmon fillet on a large square of foil and top with pepper, chili and lime slices.
  3. Whisk the lime juice, soy sauce, honey, garlic and sesame oil, then spoon over each fillet.
  4. Fold the foil into a sealed parcel and bake for 15-18 minutes until the salmon flakes easily.
  5. Open carefully and serve with rice or greens.
