Ingredients
- 700g chicken thighs, sliced
- 3 bell peppers, sliced
- 2 onions, sliced
- 2 tbsp fajita seasoning
- 2 tbsp olive oil
- 2 cups cooked rice
- 1 can black beans, drained
- 1 lime, juiced
Method
- Heat the oven to 220°C (425°F).
- Toss the chicken, peppers and onion with fajita seasoning and olive oil on a large tray.
- Roast for 20-22 minutes, stirring once, until the chicken is cooked through.
- Divide the rice, black beans and fajita mixture between five containers.
- Squeeze lime over each portion before sealing and refrigerating.
